SPICY CARROT LOAF | |
2 1/4 c. all purpose flour 1 1/4 c. + 3 tbsp. Quaker Quick or Old Fashioned oats (uncooked) 3/4 c. packed brown sugar 1/2 c. chopped dates or raisins 4 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. ginger 1/4 tsp. salt (optional) 1/2 c. frozen apple juice concentrate, thawed 1/3 c. vegetable oil 1/4 c. water 4 egg whites 1 c. shredded carrots Heat oven to 350 degrees; lightly oil 8 x 4 or 9 x 5 inch loaf pan. Combine dry ingredients except 3 tablespoons oats and mix well. Add combined liquid ingredients, mixing until just moistened. Fold in carrots, spread evenly into prepared pan. Sprinkle with remaining 3 tablespoons oats. Bake 1 hour and 10 minutes or until toothpicks inserted in center comes out clean; cool 10 minutes. Remove from pan, cool completely. |
