ITALIAN MEATBALLS 
1 lb. ground lean veal
1 lb. ground lean pork
1 lb. ground lean lamb
1/4 c. grated Romano cheese
1/4 c. grated Parmesan cheese
1 1/2 c. bread crumbs
3 eggs
1 1/2 tbsp. parsley
3 cloves minced garlic (or 1 tbsp. granule)
Salt and pepper to taste
1/2 med. onion (optional)
1/2 green bell pepper (optional)
1/4 c. tomato sauce
1/4 c. virgin olive oil

Mix all ingredients in a large bowl. Form into balls. In a large skillet with hot olive oil, cook meatballs over medium heat until well browned on all sides turning with a wooden spoon. Makes about 25.
