ITALIAN MEATBALLS 
1/2 lb. ground beef
1 egg
1/4 c. cracker crumbs
1/4 c. Parmesan cheese
1 clove garlic, pressed
1/2 tbsp. dried parsley flakes
1/2 tsp. oregano leaves
1/8 tsp. whole thyme leaves
1/4 tsp. pepper
1 (8 oz.) can tomatoes, chopped
1/2 c. Parmesan cheese, grated

1. Combine all the ingredients except last 2.

2. Shape 12 (1 1/4 inch) meatballs. Put in shallow dish microwave uncovered on high heat for 3-4 minutes.

3. Pour chopped tomatoes over meatballs.

4. Sprinkle 1/2 cup Parmesan cheese over dish and cover.

5. Microwave covered for 3 minutes or until done. Serves 3-4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
