OVEN SWISS STEAK 
1/2 to 3/4 lb. boneless beef round steak (3/4 inch thick)
2 tbsp. flour
1/2 tsp. salt
1 (8 oz.) can stewed tomatoes
1/4 c. chopped carrots
1 tbsp. chopped onions
1/4 tsp. Worcestershire sauce
2 tbsp. shredded sharp American cheese
1/4 c. chopped celery

Cut meat into 2 portions. Mix flour and salt; pound into the meat. Set aside remaining flour.

Brown meat in small amount of hot shortening. Place meat in small shallow baking dish. Blend remaining flour with drippings in skillet. Add remaining ingredients; except cheese and cook stirring constantly until mixture boils. Pour over meat, cover and bake in moderate 350 degree oven for 2 hours or until meat and vegetables are tender. Sprinkle cheese over meat. Return to oven for a few minutes. Yield: 2 servings.
