ZUCCHINI CASSEROLE 
4 slices bacon, cooked crisp
1/4 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped red and green peppers
1/2 c. raw rice
2 c. chopped squash
2 c. chopped tomatoes
1 1/2 tsp. salt
1/8 tsp. oregano
1/8 tsp. thyme
1/4 tsp. pepper
1 c. shredded cheese

Fry bacon, reserving enough bacon drippings to saute' onion, celery and peppers until tender. Add rice and stir well to coat rice. Add squash, tomatoes and seasoning. Cook until rice is done. Sprinkle with cheese and place in oven for a few minutes or until cheese melts. this should be cooked on top of stove until cheese is added. Bacon should be crumbled over the mixture before it is served.
