30 MINUTE CHEDDAR CHOWDER 
2 med. (2 c.) potatoes, diced
1 med. (1/2 c.) carrot, sliced
1 stalk (1/2 c.) celery, sliced
1/4 c. chopped onion
1 1/2 tsp. salt
Dash pepper
1/4 c. flour
2 c. milk
1 (8 oz.) pkg. cheddar cheese, shredded

Add first 6 ingredients to 2 cups water and bring to a boil. Reduce heat to low, cover and simmer 15 minutes, until potatoes are tender. DO NOT DRAIN. Mix flour and 1/2 cup milk until smooth. Pour flour mixture and remaining 1 1/2 cups milk into vegetables and cook, stirring constantly. When mixture thickens, pour in cheddar cheese and stir until melted.
