CHEDDAR CHOWDER 
2 c. boiling water
2 c. diced potatoes
1 c. carrot slices
3/4 c. celery slices
1/2 c. chopped onion
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. (8 oz.) shredded sharp Cheddar
Either 1 lb. browned and drained ground beef or 1 c. cubed ham

Add water to vegetables, salt and pepper. Cover, simmer 10 minutes. Do not drain. Make white sauce with butter, flour and milk. Add cheese, stir until melted. Add vegetables and liquid and meat. Heat through, do not boil.
