SPUDS AND CHEDDAR 
6-8 lg. potatoes
1 tsp. salt
1 med. onion, thinly sliced
3 tbsp. butter
1/3 c. flour
3 1/2 c. milk
6 oz. shredded cheddar cheese
3/4 tsp. salt
1/8 tsp. pepper
1 lg. pack dried beef
1 can French fried onion rings

Wash and peel potatoes. Slice into 1/4 to 1/2 inch slices. Bring large pan water to boil, add sliced potatoes, 1 teaspoon salt and onion. Boil 1 minute, drain. In same pan, melt butter, add flour and stir. Add milk, stir until smooth. Cook 1 minute. Add cheese, stir until cheese melts. Add 3/4 teaspoon and 1/8 teaspoon pepper. Grease a large casserole dish and combine beef, sauce, and potatoes.

Bake at 350 degrees uncovered for 1 hour. Sprinkle on onion rings and bake 10 minute more.
