CHEDDAR CHEESE CHOWDER 
3 c. chicken broth
4 med. potatoes (cubed)
1/2 c. onion (chopped)
1/2 c. green pepper (chopped)
1 c. carrots
2/3 c. butter
2/3 c. flour
3 1/2 c. milk
4 c. grated sharp Cheddar

Cook potatoes and vegetables in chicken broth until tender. Mix butter and flour until smooth and add milk slowly until thickened. Then add Cheddar cheese. Add vegetable mixture to milk mixture, then add 2 ounce jar pimento and 1/4 teaspoon hot sauce. Heat until warm - do not boil. Enjoy!
