FRESH VEGETABLE RELISH 
2 med. tomatoes, chopped
2 med. cucumbers, chopped
1 stalk celery, sliced or chopped
1 sm. onion, chopped
1/4 c. firmly packed brown sugar
2 tsp. salt
1/4 c. vinegar
1/2 tsp. mustard seed or dill weed

In 1 quart container combine all ingredients; mix well. Cover and refrigerate several hours or up to 3 months.

For a flavor variation add any of the following: green pepper, red pepper, onion or cabbage. Yield 3 cups of relish.
