FRESH VEGETABLE RELISH 
5 med. tomatoes, peeled and diced
1 med. sized green pepper, diced
1 sm. onion, diced
1/2 c. diced celery
1/4 tsp. pepper
1 1/2 tsp. salt
2 1/2 tbsp. white vinegar
2 1/2 tbsp. sugar
1/3 c. water

Combine all ingredients in a medium bowl; stir well. Cover and chill before serving.

Yields 3 1/2 cups.
