BUTTERSCOTCH DROP COOKIES | |
3 1/2 c. sifted all-purpose flour 1 tsp. double acting baking powder 1/2 tsp. baking soda 1 tsp. salt 1/2 tsp. cinnamon 2/3 c. soft butter 2 c. firmly packed brown sugar (dark brown) 2 eggs 1 tsp. vanilla 2/3 c. buttermilk or sour milk 1 c. chopped pecans or walnuts (optional) Sift flour, baking powder, soda, salt and cinnamon together. Cream butter and sugar thoroughly. Add eggs and vanilla, beating until light. Alternately add flour mixture and buttermilk. Beat after each addition until smooth. Add nuts. Drop by teaspoons on lightly greased baking sheet. Bake in moderate 350 degree oven for 8 to 12 minutes. Yield: 6 dozen large or 10 dozen small cookies. |
