OATMEAL PANCAKES 
1/2 c. rolled oats
2/3 c. water
1 egg
1 c. buttermilk
1/4 c. butter, melted
1 c. flour
1 tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1 finely chopped apple, if desired

Combine oatmeal and water, let stand 10 minutes. Beat egg, stir in buttermilk, butter and oatmeal. Combine flour, sugar, baking powder and soda. Stir into egg mixture. Fold in apple (if using). Drop batter by spoonfuls onto hot griddle. Turn when pancakes are lightly browned and bubbles form. If batter thickens, add 1 to 2 tablespoons milk.

12-15 5 inch pancakes.
