OATMEAL - APPLE PANCAKES OR
WAFFLES
 
2 c. milk
1 1/2 c. rolled oats
2 eggs
1 c. whole wheat flour
2 1/2 tsp. baking powder
Dash of salt (optional)
1 tsp. cinnamon
1/3 c. vegetable oil
2 tbsp. honey
1/2 c. unpeeled apple, chopped fine

Pour the milk over the oats and let stand for about 10 minutes. Stir in the eggs. Sift together the flour, baking powder, salt, and cinnamon and add to the oats, milk, and egg mixture. Stir in oil, honey, and apples.
