CABBAGE CASSEROLE 
1 med. onion, chopped
3 tbsp. butter
1 lb. ground beef
1/2 tsp. salt
1/8 tsp. pepper
6 c. coarsely chopped cabbage
1 can tomato soup
1 c. cooked rice (optional)

Saute onion in butter. Add ground beef and seasonings, heating through but not browning. Spread 3 cups cabbage in 2 quart casserole. Add meat mixture, then rice, then top with 3 cups cabbage. Pour soup over all. Bake for 1 hour at 350 degrees.

Tastes like cabbage roll - only better!
