CABBAGE BEEF CASSEROLE | |
1 lb. ground beef 2 med. onions, diced 1 med. head green cabbage, coarsely sliced 2 med. carrots, thinly sliced 2 1/2 tsp. salt 3/4 c. reg. long cooking rice 1/4 tsp. pepper 1 (13 3/4 to 14 1/2 oz.) can beef broth 1/2 c. water In 5 quart Dutch oven or sauce pot, over high heat, cook ground beef and onions until pan juices evaporated and meat is well browned, stirring occasionally. Remove saucepan from heat and add cabbage, carrots, salt and pepper. Toss to mix. Pour uncooked rice into 3 quart casserole. Spoon ground beef mixture on top of rice. Pour beef broth and water over mixture. Cover casserole and bake in 350 degree oven for 1 hour. To serve, stir ground beef mixture and rice. 6 main servings -310 calories per serving. |
