MOUNTAIN STYLE ZUCCHINI 
3/4 c. diced bacon
1 1/2 c. chopped onions
1/2 c. chopped green peppers
6 c. whole tomatoes
9 c. fresh zucchini, washed & sliced in 1/4" slices
Cheddar cheese, shredded
Salt & pepper to taste

In large saute pan, saute bacon until crisp. Add onions and green pepper. Saute until tender. Drain juice off of tomatoes. Add to vegetable mixture. Crush tomatoes. Add zucchini, salt, pepper and crushed tomatoes to saute pan. Cover and continue to cook until zucchini is tender, but firm, approximately 30 minutes. Stir frequently to prevent scorching.

Just before serving place in baking pan. Bake in 350 degree oven or until internal temperature reaches 140 degrees. Top with Cheddar cheese and place in oven until cheese melts. Serves 22. For smaller servings, divide by number of servings wanted.
