CHICKEN OR CRAWFISH FETTUCCINE 
1 1/2 sticks butter
3 stalks celery, chopped
1 bell pepper, chopped
3 or 4 garlic pods, chopped
1/3 c. flour
2 lbs. crawfish tails or about 6 chicken breasts
4 tbsp. parsley, chopped
1 (12 oz.) pkg. egg noodles, cooked
1 lb. hot Velveeta cheese
1 carton half and half
Green onion tops, chopped

Saute butter, celery, bell pepper and garlic. Add flour, blend well. Cook over low heat. Add crawfish, green onions and parsley and cook on very low fire for 15 to 20 minutes.

Add cheese, half and half, and salt and pepper to taste. Cook until cheese is melted. Add noodles. Blend well and pour into buttered casserole dish (9x13). Bake at 350 degrees uncovered, for 20 minutes.

When using chicken, cut into small strips and saute some before adding to the vegetables.
