CHANTILLY POTATOES 
3 c. mashed potatoes
1/2 c. heavy cream
1/2 c. grated Swiss or Gruyere cheese
Salt
Freshly ground pepper

Preheat the oven to 350 degrees. Butter a shallow 1 1/2 quart baking dish. Spread the mashed potatoes in the baking dish. Whip the cream until stiff, fold in the cheese, and add salt and pepper to taste. Spread over the mashed potatoes. Bake for 25-30 minutes or until the top is delicately brown. Makes about 4-5 servings.
