OLD FASHION FILLED COOKIES 
2 c. sugar
2 eggs
1 c. plus 2 tbsp. shortening
1 tsp. vanilla
6 c. flour
4 tsp. cream of tartar
2 tsp. baking soda
1 tsp. salt
1 c. milk

FILLING:

2 pkgs. dates
1 c. sugar
1 c. water
1/4 c. chopped nuts

Cream together sugar, eggs, shortening. Add vanilla. Sift together 5 cups flour, salt, cream of tartar, soda. Add alternately with milk. Add last cup of flour gradually. Dough should be soft. Chill thoroughly.

Combine ingredients for filling. Cook until stiff.

After dough is chilled, roll about 1/8 inch thick on floured board. Using a 2 inch cookie cutter dipped in flour, shape cookies and place on lightly greased baking sheet about 2 inches apart. Place 1 heaping teaspoon of filling on each circle and top with another circle of dough. Press edges together with fingers. Prick top with fork several times. Board should be floured with each rolling as dough is quite soft. Bake at 350 degrees F. 10 to 12 minutes.
