APPLE BUTTER 
1 gal. apples, washed and cored
2 pts. sugar
1/8 tsp. vinegar
1 1/2 tsp. salt
1 tsp. cinnamon

Combine apples, sugar, vinegar and salt. Cook in crockpot on low overnight, with lid off. When apples are easily mashed with potato masher, run through colander, and add cinnamon. Return apples to crockpot and cook 15 to 20 minutes longer. Put in dry jars and seal while hot. Jars seal better if heated in oven.
