CHEESECAKE CUPCAKES 
3 pkg. (8 oz.) cream cheese
5 eggs
1 c. sugar
1 1/2 tsp. vanilla

Mix all above ingredients. Fill 24 paper lined muffin cups 3/4 full. Place in 325 degree oven for 40 minutes until light brown. Remove from oven, after a few seconds when center falls add filling (below) in center. Then return to oven for 5 minutes more.

FILLING:

1 c. sour cream
1/4 c. sugar
1/4 tsp. vanilla

Keep refrigerated and can be frozen.
