Saute 1/2 to 1 cup chopped onions in 1/3 cup of oil. Add 2 cups sliced smoked stuffed pork sausage; brown sausage lightly. 1 can Rotel tomatoes 1 (16 oz.) can tomatoes 1 can tomato sauce 1 c. water Salt and red pepper to taste Simmer 30 minutes to 1 hour and serve over cooked rice. You may substitute catfish fillets, shrimp or crawfish for the sausage. I have even used chicken, which is good. |
