SUMMER FRUIT SALAD 
2 c. cooked rice, cooled to room temperature
1/2 c. strawberries, quartered
1/2 c. grape halves
2 kiwi fruit, sliced into quarters
1/2 c. pineapple tidbits
1/2 c. banana slices
1/4 c. pineapple juice
2 tbsp. plain yogurt
1 tbsp. honey
Lettuce leaves

Combine rice and fruit in a large bowl. Blend pineapple juice, honey, and yogurt in a small bowl, pour over rice mixture. Toss lightly. Serve on lettuce leaves. Makes 4 servings.
