COCONUT CREAM PIE | |
1 1/2 c. sugar 3 egg yolks 1/3 c. flour 1/2 tsp. salt 1 tsp. vanilla 2 c. milk 1 c. Angel Flake Coconut 1 baked 9" pie crust 3 egg whites 1/4 c. sugar 1/4 tsp. vanilla In blender mix egg yolks, sugar, flour, salt and milk. When blended cook over low heat until thickened. Stir constantly. When thickened add vanilla and 3/4 cup coconut. Spread in baked, cooled pie crust. Beat 3 egg whites, 1/4 cup sugar until stiff; add 1/4 teaspoon vanilla. Spread over filling, top with remaining coconut and brown in oven at 400 degrees for approximately 5 minutes. |
