FRESH BROCCOLI WITH CHEESE SAUCE 
1 1/2 lb. fresh broccoli spears
2 tbsp. butter
2 tbsp. flour
1 c. milk
1 c. sharp cheddar cheese
1/2 tsp. white pepper
Toasted sesame seeds (opt.)

Trim 1 inch from butt end of spears and peel if broccoli appears tough. Arrange spears with tender heads toward center of dish and cover tightly with plastic wrap. Microwave 8 to 12 minutes on high until pieces can be pierced with fork. Cover and let stand while cheese sauce is prepared. Melt butter and add flour, stirring until smooth. Add milk and pepper.

Cook on 70 power for 4 to 5 minutes until thickened. Remove from oven and add grated cheddar cheese, stirring until melted and smooth. Pour over broccoli and add toasted sesame seeds if available. Garnish with slices of tomato, if desired. 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
