MICROWAVE CHOCOLATE FUDGE
1/2 c. butter
1/4 c. firmly packed brown sugar
1/3 c. unsweetened cocoa
1/4 c. (less 1 teaspoon) milk
3 c. sifted powdered sugar
1 tsp. vanilla
1/2 c. chopped nuts

Prepare 8 x 8 pan by cutting 2 sheets of waxed paper. Criss cross sheets on top of each other so that edges extend above pan on 2 sides. Melt butter in microwave safe 2 quart measure or casserole. Stir in brown sugar, cocoa and milk. Microwave (high) 2 to 2 1/2 minutes or until at a rooming boil, stir once towards end of cooking. Stir in powdered sugar, vanilla and nuts. Do not beat. Pour into pan. Cool several hours at room temperature. Lift fudge out and cut into squares.

Conventional: Bring butter, brown sugar, cocoa and milk to a boil on medium heat, stirring constantly, boil 1 minute, then continue as above.

Since microwave ovens vary in power, you may need to adjust your cooking time.
