BLACK EYED PEA SOUP 
7 c. water
12 oz. black eyed peas
2 potatoes, cubed
2 stalks celery, sliced
2 carrots, sliced
1 med. onion, sliced
2 to 3 cloves garlic, minced
1 tsp. basil
1 tsp. dill weed
Soy sauce

Rinse peas, soak overnight. Mix all ingredients except soy sauce, bring to a boil. Boil 2 minutes. Reduce heat, simmer for 1 to 2 hours. Stir occasionally, mashing some on sides of pan to thicken. Add soy sauce to taste.
