JIM CHERRY'S EGGLESS BUTTERLESS
MILKLESS CAKE
 
1 c. brown sugar
1 c. water
2 c. raisins
1 tbsp. lard
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1 tsp. baking soda, dissolved in 1 1/2 to 2 tbsp. hot water
2 c. all-purpose flour
1/2 tsp. baking powder

Combine brown sugar, 1 cup water, raisins, lard, and spices in a saucepan; boil together 3 minutes. COOL. When cool, add soda, flour, and baking powder. Mix together thoroughly. Pour into a greased and floured 8 inch tube pan. Bake in a 350 degree (preheated) oven for 45 minutes or until cake tests done.
