OATMEAL WAFFLES 
1 1/4 c. sifted all purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, beaten
1 1/2 c. milk
1/3 c. liquid or melted shortening
1/2 c. rolled oats (quick or old fashioned, uncooked)

Sift together flour, baking powder, and salt in bowl. Combine egg, milk, and shortening. Add to dry ingredients and beat with rotary beater until dry ingredients are just moistened. Do not overbeat. Stir in oats. Bake in preheated waffle baker until steaming stops and waffles are golden brown. Approximately 2 minutes. Serve warm with butter and syrup. Makes 4 servings.
