1 c. milk, scalded 1/3 c. shortening (Crisco) 1/3 c. sugar 1 tsp. salt Grated rind of 1 lemon 1 pkg. dry yeast 2 beaten eggs 3 c. flour Combine milk, shortening, sugar, salt and lemon rind. Cool to lukewarm. Soften yeast in this mixture. Add eggs and flour. Beat well. Cover with a damp cloth. Let rise in a warm place, 80 to 85 degrees until double, abut 2 hours. Beat and rise again. Turn out, knead and let rest 10 minutes. Roll to 1/2" and cut into 3" rounds. Place on greased baking sheets, cover and let rise until double. Press in center and fill with jam and bake at 400 degrees for 15 minutes. |
