LAURA GOODENOUGH'S APPLE COFFEE
CAKE
 
6 McIntosh apples, pared, cored, sliced (3 c.)
5 tsp. cinnamon
1 tsp. salt
1 c. salad oil
3 c. flour
1 tbsp. vanilla
2 tbsp. + 1 1/2 c. sugar
3 tsp. baking powder
4 eggs
1/4 c. orange juice

Preheat oven to 375 degrees. Combine apples, 2 tablespoons sugar and cinnamon and set aside.

Sift flour, remaining sugar, baking powder and salt into large bowl. Make a well in the center and pour in oil, eggs, orange juice and vanilla. Beat with wooden spoon until well blended (batter will be very thick). Spoon 1/3 batter into 9 or 10 inch tube pan.

Make a ring of 1/2 apple mixture (drained of excess moisture) on top, not having apple mixture touch sides of pan. Spoon another 1/3 of batter over, making a ring of remaining apples and top with remaining batter. Bake 1 hour. Can also be made with sliced fresh peaches.
