CHEDDAR-TUNA CHOWDER 
2 c. boiling water
Salt
1 lg. potato, diced
1/2 c. carrots, diced
1/2 c. celery, diced
1 sm. onion, chopped
1/4 c. butter
1/4 c. flour
2 c. milk
3/4 lb. Cheddar, shredded
1 (6 1/2 oz.) can tuna, drained
1 (8 oz.) can cream style corn
Pinch of dried rosemary
Few drops hot pepper sauce
Chopped chives

Put water in saucepan and season with salt. Add next 4 ingredients, bring to boil, cover and simmer 10 minutes. Do not drain.

In small pan, melt butter and blend in flour. Gradually stir in milk and cook, stirring until thick. Add cheese and stir until melted. Add vegetables and liquid, tuna, corn, rosemary, and hot pepper sauce. Add salt to taste and garnish with chives. 4-6 servings.
