NEL'S TAFFY APPLE SALAD | |
1 (12 oz.) can crushed pineapple (drain and save juice) 1/2 c. sugar 1 tbsp. flour 1 1/2 tbsp. vinegar 1 egg, beaten 5 Granny Smith apples (unpeeled), diced 1 1/2 c. salted peanuts (crushed slightly) 2 c. mini marshmallows 1 (12 oz.) Cool Whip Cook pineapple juice, sugar, flour, vinegar and beaten egg over very low heat until thickened. Refrigerate 2 hours. Add apples and crushed pineapple to sauce. Add peanuts and marshmallows. Fold in Cool Whip. Use more peanuts to make decorative ring around edge of serving bowl. |
