PASTA PANCAKE | |
16 oz. fine linguine, vermicelli or thin spaghetti 2 tbsp. acceptable vegetable oil, divided Vegetable oil spray 1 tsp. sesame seeds, toasted Serves 8. 1 wedge per serving. Preheat oven to 400 degrees. Cook noodles according to package directions, omitting salt. Drain, add 1 tablespoon oil and toss to coat. Grease a large 12-inch pizza or round baking pan with vegetable oil spray. Heat pan in preheated oven 3 to 4 minutes. Arrange noodles on heated pan and press down lightly. Drizzle the remaining tablespoon of oil on top. Bake 15 to 20 minutes, or until the edges are crisp and lightly browned. Sprinkle with sesame seeds. Cut into eight wedges and serve. Try this for a tasty alternative to plain noodles. The recipe can be made from freshly cooked or leftover noodles. |
