LENTIL SOUP | |
3 tbsp. olive oil 2 lg. onions, chopped 1 garlic clove, minced 3 carrots, chopped 12 c. chicken broth (can use canned or from dehydrated cubes) 2 1/2 c. dried lentils 1 c. ham, chopped 1/2 tsp. pepper 1/2 tsp. salt (do not use if you used bouillon cubes) Saute onion in oil with garlic and carrots. Add broth, lentils, and ham. Cover and simmer until lentils are tender, about 1 hour. |
