AMISH SUGAR COOKIES 
1 c. butter
1 c. sugar
1 c. powdered sugar
2 eggs, beaten
4 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cream of tartar
1 1/2 tsp. vanilla
1 c. oil

Beat together butter, sugar and powdered sugar. Set aside. Sift together flour, salt, soda, and cream of tartar. Add flour mixture and remaining ingredients to sugar mixture. Mix well. Drop by teaspoons on ungreased cookie sheets. Flatten with bottom of a glass that has been covered with a dampened cloth dipped in sugar. Bake at 325 degrees for 17 to 25 minutes. Makes 8 dozen.
