ESCALLOPED TOMATOES 
1 can whole tomatoes
1 tsp. salt
1/4 tsp. pepper
2 tsp. sugar
1/4 c. finely chopped onion
Juice of half lemon
2 slices bread, diced into sm. cubes
Melted butter

Pour tomatoes into shallow baking pan (do not use pyrex). Break tomatoes into small pieces. Add salt, pepper, sugar, onion and juice of half lemon. Place pan over medium heat and allow to simmer until juice has been reduced to half. Cover tomatoes with bread cubes, pressing slightly into juice, sprinkle with enough melted butter or thin to thoroughly saturate bread cubes.

Bake at 400 degrees for 15 minutes until cubes are slightly brown then place under broiler until bread is golden brown. (1 cup whole kernel corn may be added to tomatoes before adding bread cubes.)
