ESCALLOPED POTATOES 
6 potatoes, thinly sliced
3/4 c. finely chopped onions
1/2 c. finely chopped green pepper
1/4 c. finely chopped celery
1/2 c. flour
1 tbsp. dry mustard
1 1/2 c. milk
1 tsp. salt
1/2 tsp. black pepper
4 strips bacon

Make 3 layers casserole with 1/3 of all ingredients in layers except the bacon. Lay bacon strips on top of last layer. Cover.

Bake at 350 degrees for 50 to 60 minutes until milk boils. Uncover and continue baking for 15 minutes.
