ESCALLOPED POTATOES 
Sliced potatoes
1 c. milk
Sm. onion
Grated cheese (cheddar or sharp)

Melt a little butter to cover bottom of fry pan. Put in your sliced potatoes and onion. Salt and pepper to taste. Pour milk over potatoes so they just cover them. Put on low for approximately 30 minutes, occasionally stirring. When potatoes are tender, take off the heat and cover with grated cheese. Cover. Let stand until cheese melts. Stir cheese in and serve.
