CHEESE AND SPINACH PUFFS 
1 (10 oz.) pkg. frozen spinach
1/2 c. chopped onion
2 slightly beaten eggs
1/2 c. grated Parmesan cheese
1/2 c. shredded Cheddar cheese
1/2 c. blue cheese salad dressing
1/4 c. butter, melted
1/8 tsp. garlic powder
1 (8 1/2 oz.) corn muffin mix

In saucepan, cook spinach and onion according to directions on package. Drain and press out all excess liquid. Combine eggs, cheese, salad dressing butter and garlic powder. Add spinach mixture and muffin mix, mix well. Cover and chill. Shape dough into 1-inch balls.

Cover and chill until serving time or place in freezer container and freeze.

To serve, place puffs on baking sheets and bake at 350 degrees until light brown. Bake frozen puffs for 12-15 minutes; chill puffs for 10-12 minutes. Serve warm.
