ARROZ CON POLLO 
2 lb. frying chicken, cut in serving size pieces
1 tbsp. salad oil
1/2 green pepper, diced
1 tomato, diced
1 clove fresh garlic, minced
2 tsp. salt
1/2 tsp. pepper
1 c. tomato sauce
2 1/2 c. raw rice

Cut chicken into serving size pieces. Heat oil in a heavy Dutch oven and brown the chicken pieces. Lower the heat, add the onions, peppers, tomatoes and garlic. Saute for 10 minutes. Add tomato sauce, salt and pepper and let it simmer for about 4 minutes at low heat. Add water and at medium heat, bring to a boil. Add rice and cook until the rice absorbs the water. Lower the heat and cover until rice is cooked.
