MOIST OATMEAL COOKIES 
1 c. Crisco Butter shortening (or use 1/2 butter; 1/2 shortening)
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 grated sm. apple (with peeling)
1 tsp. vanilla
1 1/2 c. sifted all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 c. Quick oats (1-minute kind)
1 c. raisins
1/2 c. chopped pecans (I probably use 1 c.)

Cream together shortening and sugars; beat in eggs and vanilla. Stir in grated apple. Sift together flour, salt, soda and cinnamon. Gradually stir into creamed mixture. Stir in oats, raisins and nuts. (Since apples come in different sizes, dough may be sticky. Add a little more flour to compensate.)

Form into small balls; place about 1 1/2 inches apart on greased cookie sheet. Bake at 350 degrees about 8-9 minutes or until lightly brown. Remove to cooling rack. Makes about 6 dozen.
