LAURA'S LUSCIOUS LEMON SQUARES 
1 c. all-purpose flour
1/2 c. butter, softened
1/4 c. confectioners' sugar
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. lemon juice

If using self-rising flour, omit baking powder and salt.

Heat oven to 350 degrees. Mix thoroughly flour, butter and confectioners' sugar. Press into ungreased square pan, 8 x 8 x 2 inches building up a 1/2 inch edge. Bake 20 minutes. Beat remaining ingredients about 3 minutes or until light and fluffy. Pour over hot crust. Bake about 25 minutes longer or just until no imprint remains when touched lightly in center. Cool; cut into squares. Makes 25 cookies.
