LAURA'S MAPLE MUFFINS 
2 eggs
1 1/2 c. maple syrup
1 1/2 c. plain yogurt
2 tbsp. melted butter
1 c. rolled oats
1 c. whole wheat flour
1/2 tsp. salt
1 tbsp. baking powder
1 c. roughly chopped walnuts

Beat eggs with maple syrup, yogurt and melted butter. Toss oats, flour, salt and baking powder together. Add dry ingredients to the liquid and stir just until blended. Fold in nuts. Fill 10-12 buttered muffin cups. Bake at 350 degrees for 25 minutes. Makes 10-12 muffins.
