PERSIMMON BARS 
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 1/2 cups oats
1 cup brown sugar
3/4 cup (1 1/2 sticks) butter
3/4 cup persimmon pulp

Sift dry ingredients. Stir in oats and sugar. Cut in butter till crumbly. Pat 2/3 of crumb mixture into 11x7x1-1/2 pan. Spread with fruit. Cover with remaining crumb mixture.

Bake at 375°F for about 35 minutes or until brown. Cool.
