MY MOTHER'S FRIED CHICKEN 
1 (2 to 3 lb.) fryer
2 tsp. salt
1 tsp. pepper
2 c. flour
1/2 c. cornmeal
About 1 c. oil

Heat oil in heavy skillet (cast iron). Cut chicken in pieces. Mix flour, cornmeal, salt and pepper. Roll chicken in flour mixture and place in hot oil. Brown well on both sides. After all pieces are browned, put all back in skillet, cover and simmer until chicken is fork tender, about 40 minutes.
