TEXAS TATERS AND CHICKEN | |
8 frozen boneless skinless chicken breasts (defrosted) 1/2 cup (1 stick) butter 6 potatoes, diced 1 garlic clove, minced (or garlic powder) 1/2 cup onion, diced salt and pepper, to taste "Slap Ya Mama" Cajun seasoning (or Tony's) 1/2 to 1 cup water non-stick cooking spray (Pam) garlic-infused cooking spray (optional) In a regular skillet add butter and heat until melted. Now add potatoes, garlic, onion, salt, pepper and Cajun seasoning. Seasonings may be adjusted depending on taste. Now add chicken and water. Spray non-stick cooking spray and garlic-infused spray (if using) over all of the ingredients. Stir and allow to cook. Wait until everything tastes right to you. Make sure chicken is done and not pink in the middle (160°F on meat thermometer). Serve and enjoy! This meal should take about 45-60 minutes to make.
