UPSIDE-DOWN BERRY PIE | |
Single pastry crust 2 egg whites 1/2 tsp. vanilla 1/4 tsp. vinegar 1/8 tsp. salt 1/3 c. sugar 2 pt. fresh strawberries 1/2 c. sugar 3 tbsp. cornstarch 3/4 c. water 1 c. whipping cream Beat egg whites, vanilla, vinegar, salt to soft peaks. Gradually add 1/3 cup sugar to stiff peaks. Spread on bottom of sides of pastry shell. Bake at 350 degrees for 12 minutes until meringue is golden; cool. Mash and sieve 3 cups of berries to make 1 cup puree. In saucepan combine 1/2 cup sugar and cornstarch. Add water and puree. Cook and stir until thickened and bubbly. Cook and stir 2 minutes. Spread over meringue; chill until set. Whip cream; spread atop. Slice remaining berries over top for garnish. |
