UPSIDE - DOWN STRAWBERRY PIE 
3 egg whites
1/2 tsp. vinegar
1/4 tsp. salt
1/3 c. sugar
2 tbsp. cornstarch
1/2 c. sugar
1/2 tsp. vanilla
3 c. strawberries
1/2 c. water
1 (10") baked pie shell

Beat egg whites with vinegar and salt to soft peaks. Gradually add 1/2 cup sugar and vanilla; beat until stiff peaks form. Spread on bottom and sides of baked pastry shell. Bake at 325 degrees for 12 minutes. Mash and sieve 2 cups of strawberries (in blender).

In saucepan, blend together 1/3 cup of sugar and cornstarch. Add water and mashed berries. Cook and stir until mixture thickens and boils. Cook 2 minutes. Tint with red food coloring (2-3 drops). Cool slightly. Spread over meringue. Chill until set. Whip cream and spread over top. Slice remaining 1 cup strawberries and put on top.
